Hi everyone, I am back with yet another biryani, EGG BIRYANI. I was so happy when Srivalli had biryani as one of the themes this time in Blogging Marathon because making Biryani always gives me so much joy as it is my family's favorite.
The coating which I have made for the eggs is absolutely stunning and so flavourful. Don't get scared of the ingredients list do just follow my steps and everyone in your family will appreciate for this spicy biryani. Ingredients
For Rice
Basmati Rice - 1 1/2 cups
Water - 7 cups
Salt - to taste
Cloves - 4
Cinnamon - a small piece
Cardamom - 1 ( I did not add, as my hubby don't like)
Marati Mogu - 1
Star Anise - 1
For Masala
Onion - 2
Tomato -2
Ginger Garlic Paste - 1 tsp
Mint Leaves - 10 to 15
Coriander Leaves - few
Turmeric Powder - 1/4 tsp
Chilli Powder - 3/4 tsp
Coriander Powder - 3/4 tsp
Salt - to taste
Oil - 2 tsp
For Egg Coating
Egg - 4 to 6
Turmeric Powder - 1/8 tsp
Chilli Powder - 1/4 tsp
Coriander Powder - 1/4 tsp
Garam Masala - 1/8 tsp
Salt - to taste
Oil - 2 tsp
For layering
Fried onion -1
Milk - 2tsp
Saffron - few
Mint leaves - 5
Coriander - few
Water- 2 to 3 tsp
Procedure
For Rice
Wash and soak rice in water for 15 minutes and strain it in a strainer.
Boil 7 cups of water along with star anise, marati mogu, cloves, cinnamon, cardamom and salt.
Now add in the drained rice and cook until the rice is 70% cooked.
After it is cooked for 70% drain it in a strainer and spread it in a plate.
For egg
Hard boil eggs and discard the shells.
Heat oil in a pan and add the eggs.
Then add in turmeric, chilli, coriander powder, garam masala and salt. Toss for 2 to 3 minutes until the eggs coat well with the masalas.
For masala
Heat oil in a pan add onion and fry till translucent then add ginger garlic paste and saute for a minute.
Next add in the mint, coriander leaves and tomatoes and fry till mushy.
Now add turmeric, chilli, coriander powder and salt.
Then add in the masala toasted eggs to it and just give a toss.
Now remove the eggs from the masala and keep it separate (as I am going to place these eggs at top while layering)
Now Layering
Get ready with all your items.
First grease your cooker (sides too)
First layer is some rice.
Next add in some masalas and sprinkle some water.
Now next is again some rice and sprinkle some water.
Next is addition of some mint leaves, fried onions, coriander leaves and again rice and some sprinkling of water.
( Repeat the same process of layering )
Next add the remaining masalas and egg .
Finally add the saffron soaked in milk.
Close the lid and put on weight.(with Gasket)
Heat up the dosa kal for 10 minutes and reduce it to lowest and place the cooker and cook for about 15 minutes.
Open the cooker after 1/2 an hour and gently mix it with a fork.
Your yummy Egg Biryani is ready to be served.
