Cheesy Garlic Biscuits


For the 2nd day of Cheese Special ( BM 48 ) I am going to tempt you all with Cheesy Garlic Biscuits. Ahhhh:)...even the title mesmerises us, doesn't it?? Cheese and Garlic are such a lovely combination. They absolutely go hand in hand.
This is a real treat for all the Cheesy garlic lovers... And I must warn you that this is a quite heavy dish. So make sure you are ravenous or find some more hungry tummy to join you for this delight:) Ok now about the biscuits- these are not like our regular Indian biscuits. They are crisp on the outside and so soft inside. The final butter coating with coriander leaves uplifts the whole thing.

INGREDIENTS:
All Purpose Flour - 1 cup
Baking Powder - 1 tsp
Garlic Powder - 1/2 tsp
Salt - 1/8 tsp
Butter - 3 tbsp ( cold )
Cheddar Cheese - 1 cup ( loosely measured )
Milk - 1/4 cup + 2 tbsp
For The Topping:
Butter - 1 and 1/2 tbsp
Coriander Leaves - 2 tsp ( finely chopped )
Garlic Powder - 1/4 tsp
Salt - a pinch
METHOD:
1) Preheat oven to 220 C for 10 minutes. Mix together flour, baking powder, garlic powder and salt. Add the cold butter.

2) Rub the cold butter with the flour mixture until it resembles like coarse meal. Mix in the grated cheese

 3)Add the milk and mix until just combined. Don't overmix as it will lead to harder biscuits.

4) Line a baking tray with aluminium foil and drop the biscuits on them. I used the measuring cup ( 1/4 cup ) to form the biscuits. You can ice cream scoop too. Toast for 16 to 18 minutes or until golden brown.

5) Mix all the ingredients under the title For the Topping. Once the biscuits are out of the oven brush them with this butter topping while they are still hot.

These are best served hot. So enjoy straight from the oven

NOTES:
1) In this post too I have mentioned toast mode for even browning. You can use bake mode too but for the last 2 minutes put in broil mode for the browning effect.
2) Try not to overmix the dough as it will yield tougher biscuits.
3) The amount of salt in cheese may vary so adjust salt.
4) Don't pack and measure the cheese. Just grate and measure.
