I love making cookies and of course munching them too, Baking cookies at home always excites me a lot. Here is a easy basic cookie recipe which involves no butter and egg (so easy to measure with oil - I hate measuring butter ). Here I have used THINAI ( millet ) flour,which I bought from organic store. You can substitute with ragi, samai flour also. These cookies were so soft. They will just melt in your mouth. The chopped dates takes these cookies to a different level and makes them so Yummmmy!!!!! I totally loved these cookies and kept on munching them. At last I was happy in making a healthy cookie at home. Now on to the recipe ....
Ingredients
Thinai flour - 1 cup (I used ready made flour,which I got from organic store)
Milk powder - 2 tbsp
Baking powder - a pinch
Baking soda - a pinch
Sugar - 1/4 cup (powder it)
Oil - 1/2 cup (can use butter also)
Dates - 5-6 (chopped finely)
Vanilla essence - 1/2 tsp
Procedure
Preheat the oven for 160 for 10 minutes
Sieve Thinai, baking powder, baking soda, milk powder twice for even mixing.
Powder the sugar and mix with oil.(whisk for about 5 minutes)
Then add vanilla essence to it and mix.
Now combine dry ingredients with wet batch by batch.
Add in the chopped dates.
Now make some balls and flatten them slightly. Place it in a baking tray.
Bake this for around 10-12 minutes (it varies for oven to oven)mine got done in 10 minutes.
Notes
While taking out these cookies will be soft later it will turn crisp.
You can replace oil with butter,in that case cream the sugar and butter (whisk them till soft) nicely then add in the dry ingredients.
Stays well for a month.
