Eggless Whole Wheat Carrot Muffins

Hi, I always wanted to post a muffin because i do bake muffins once a week but somehow got postponed and finally I made it. Muffins are very simple to make and are quite handy during holidays. Dry ingredients in one bowl, wet ingredients in another bowl, mix them altogether finally bake. A fuss free breakfast or snack is ready to enjoy or should I say dessert? well enjoy it as you like :) 
This is a healthy muffin too( but doesn't taste healthy at all), no need of frosting it is delicious as it is. My son is a great fan of these muffins. He takes them to school as his snacks. He loves it.

Ingredients:
Whole wheat flour - 1 cup( I used homemade flour)
Grated carrot - 2
Curd - 3/4 cup
Butter - 1/4 cup (melted)
Milk - 2.5 tbsp
Powdered Sugar - 1/2 cup
Vanilla essence - 1/2 tsp
Cinnamon powder - a pinch
Baking powder - 1/2 tsp
Baking Soda - 1/2 tsp

Procedure:
Step 1:
Preheat the oven for 180 for ten minutes. Grease and dust ur muffin pan and keep ready.
Powder your sugar and then measure.
Sieve wheat flour, baking soda, baking powder, cinnamon (dry ingredients) twice and keep aside.

Take powdered sugar, curd, vanilla essence, milk and butter (wet ingredients) in a separate bowl.
Mix everything using a hand whisk until all are combined(don't use beater for this).

Step 2:
Now combine wet ingredients with dry ingredients.
Finally add grated carrot and just fold.

Pour into your greased muffin pan and bake for 10-12 minutes (mine got baked in 9 minutes)
Check by inserting a toothpick, if it comes out clean then done.

Notes:
Don't over mix the batter as it will result in denser muffins.
Always use powdered sugar
Sieving helps in uniform mixing
You can add nuts also (cashew or walnuts)
The sweet amount here is correct, you can reduce it if you are doing frosting
You can top with some melted dark chocolate( if you too are a chocolate freak like my sister :)) and have it.
