Corn Cheese Balls

This Corn Cheese Balls is a great starter for parties or family get together or you can simply enjoy them as an evening snack. They are crispy on the outside with soft melting cheese inside. There is no wonder that all kids love this. The main plus of this recipe is that you can make ahead these balls and store them in the refrigerator until ready to use... Ok, now on to the recipe.....

Corn Cheese Balls
INGREDIENTS:
Corn - 1/2 cup
Grated Cheese - 3/4 cup
Potato - 1 (boiled)
Coriander Leaves - 2 tbsp
Pepper - 1/2 tsp
Oregano - 3/4 tsp
Garlic paste - 1/4 tsp
Chilli flakes - 1 tsp
Chilli powder - 1/4 tsp
Salt - to taste
Corn flour - 1 to 2 tbsp
Oil - for frying
For the Coating:
All purpose flour - 2 tbsp + 1 and 1/2 tbsp
Corn Flour - 2 tbsp
Salt - to taste
Water - 1/4 cup ( or as required )
Bread Crumbs - 1/4 cup
METHOD
1) Mix together the boiled potato, corn and grated cheese along with coriander leaves, pepper, oregano ( crush the oregano in your hands before adding for better flavour ), garlic paste, chilli flakes, chilli powder and salt.

2) Add Cornflour for binding all the ingredients together ( I added 1 tbsp as it was enough for me. Add according to the wetness of your mixture ) Form as even sized balls.

3) Make a thin batter with 2 tbsp all purpose flour, 2 tbsp corn flour, a pinch of salt and 1/4 cup water. In a separate bowl take 1 and 1/2 tbsp all purpose flour. In another bowl take the 1/4 cup bread crumbs. Keep all the coating ready along with the balls.

4) First roll the balls in plain all purpose flour. Shake off the excess and dip in the prepared batter. Finally coat in the bread crumbs.

5) Repeat the step 4 for all the balls. At this stage you can refrigerte your balls until ready to use. Say like, you can prepare the balls in the morning and refrigerate until your evening party. Deep fry them in batches in low medium flame until they are browned. Drain in a tissue paper.

These Corn Cheese Balls are best when served hot. So enjoy them with tomato ketchup.....

NOTES:
1) You can even add capsicum as a variation to these balls
2) For the garlic paste, I just crushed 3 garlic cloves in mortar and pestle ( That's it instant garlic paste :) )
3) Make sure you coat your balls well or else the cheese may ooze out while frying.

Cheesy Garlic Biscuits


For the 2nd day of Cheese Special ( BM 48 ) I am going to tempt you all with Cheesy Garlic Biscuits. Ahhhh:)...even the title mesmerises us, doesn't it?? Cheese and Garlic are such a lovely combination. They absolutely go hand in hand.
This is a real treat for all the Cheesy garlic lovers... And I must warn you that this is a quite heavy dish. So make sure you are ravenous or find some more hungry tummy to join you for this delight:) Ok now about the biscuits- these are not like our regular Indian biscuits. They are crisp on the outside and so soft inside. The final butter coating with coriander leaves uplifts the whole thing.

INGREDIENTS:
All Purpose Flour - 1 cup
Baking Powder - 1 tsp
Garlic Powder - 1/2 tsp
Salt - 1/8 tsp
Butter - 3 tbsp ( cold )
Cheddar Cheese - 1 cup ( loosely measured )
Milk - 1/4 cup + 2 tbsp
For The Topping:
Butter - 1 and 1/2 tbsp
Coriander Leaves - 2 tsp ( finely chopped )
Garlic Powder - 1/4 tsp
Salt - a pinch
METHOD:
1) Preheat oven to 220 C for 10 minutes. Mix together flour, baking powder, garlic powder and salt. Add the cold butter.

2) Rub the cold butter with the flour mixture until it resembles like coarse meal. Mix in the grated cheese

 3)Add the milk and mix until just combined. Don't overmix as it will lead to harder biscuits.

4) Line a baking tray with aluminium foil and drop the biscuits on them. I used the measuring cup ( 1/4 cup ) to form the biscuits. You can ice cream scoop too. Toast for 16 to 18 minutes or until golden brown.

5) Mix all the ingredients under the title For the Topping. Once the biscuits are out of the oven brush them with this butter topping while they are still hot.

These are best served hot. So enjoy straight from the oven

NOTES:
1) In this post too I have mentioned toast mode for even browning. You can use bake mode too but for the last 2 minutes put in broil mode for the browning effect.
2) Try not to overmix the dough as it will yield tougher biscuits.
3) The amount of salt in cheese may vary so adjust salt.
4) Don't pack and measure the cheese. Just grate and measure.

Bread Pizza

I was very happy to pick the Cheese theme for BM 48 as my daughter has developed a new fondness for it. My SIL Gomathi is a regular visitor of pizza hut as my BIL is a very big fan pizzas. Almost for their every visit here in coimbatore they go there. Recently my daughter Neha has started to accompany them. In the beginning she loved the place mainly because of the play area. She will play the whole time without even touching a piece of food.
Now a days she started liking the food there. One morning she asked me for pizza. I was in a hurry but couldn't deny her ( as she asks for treats like these very rarely.. ) So, Quickly I made some bread pizza for her with the items I had in hand. She is a big fan of corn and she loves onion in almost everything she eats ( like sambar, dosai , omelette...) So I threw a handful of them with tomato sauce as the base to add a nice acidic punch. Finally I topped it with the star of the dish- Cheese!!! :)
Everybody teased me that I am cheating her for the real pizza. But you know what?? she loved it totally (Yay!!!!) And today I did it again for you all in case if you all want to enjoy a shortcut pizza :)

Bread Pizza

I have prebaked the bread by applying garlic infused oil which adds a nice flavour and also prevents the bread from getting soggy and helps the bread stay nice and crisp ( like the way I love it ..)

INGREDIENTS:
Bread - 3 slices
Olive oil - 1 tbsp
Garlic - 2 cloves
Tomato Sauce / Pizza sauce - 1 and 1/2 tbsp
Onion - 3 tbsp ( chopped )
Capsicum - 2 tbsp ( chopped )
Corn - 2 tbsp
Pepper - 1/4 tsp
Oregano - 1/4 tsp
Cheese - 1/3 cup ( grated )
Salt - to taste
Chilli Flakes - to taste ( optional )

METHOD:
1) Preheat oven to 180 C for 10 minutes. Crush 2 garlic cloves and mix well with olive oil. Brush one side of each bread slice with the garlic infused oil and toast in the oven for 2 to 3 minutes.

2) In a bowl mix together onion, capsicum and corn with salt pepper and oregano.

3) Apply tomato sauce over the bread slices and add the prepared vegetable topping. Sprinkle the grated cheese on top.

4) Toast for 5 to 7 minutes or until the cheese is all melted.

Enjoy hot !!! Sprinkle some chilli flakes on top ( I didn't as my daughter likes it this way :) )

NOTES:
1) You can do dozens of variations in this bread pizza. This is just a basic one. Run wild with a variety of combinations like paneer, mushrooms or chicken...
2) If you have pizza sauce then go ahead and use that. I didn't have any so I used tomato sauce.
3) For a mess free cleaning, line your baking tray with aluminium foil.
4) In this recipe I have mentioned toast mode instead of the regular bake mode as it works well this way for this recipe. Toast mode is nothing but heating both top and bottom heating elements in your oven.
5) I used cheddar cheese. You can use mozzarella cheese too.
